Short answer
some of the sugar (in solution) and water are used by the growing yeast, the byproducts include ethanol (ethyl alcohol) in solution and carbon dioxide, most released as a gas. It works best at particular temperature range slightly warm room! and the light level is not critical for the reaction.
If someone else can put up the actual equations?

C6H12O6 ----> C2H5OH + CO2 + H20
it isn't balanced, but this is the reaction
