There is a distinct difference between chips and french fries. Chips are larger in diameter and longer than french fries and they are also much lighter in color and "floppy" in texture. Chips are prepared in medium heat oil. I lived in the US for 7 years and could not find any fries remotely resembling chips. Chips being larger in diameter also ends up with less fat content. I know that some people prefer their fries well browned but that is not what chips look, feel or taste like. Saying that fries is the same as chips is like saying all breads are the same as they are made with the same ingredients. As for the "Fish" in fish and chips, the portions are always minimum 6 oz but mostly 8 oz and can even be 10 oz and are always battered with a dough made typically from Flour, Cornflour, Cornstarch and beer with some slight variations. Traditionally Fish and Chips was wrapped in news print when bought as a take out.
