Brewer's spent grain
Encyclopedia
Brewer's spent grain is a byproduct of beer
brewing
consisting of the residue of malt
and grain which remains in the mash-kettle after the mashing
and lautering
process. It consists primarily of grain husks, pericarp, and fragments of endosperm
. By mass, spent grains consist of about half carbohydrate
s, and the rest being mostly protein
s and lignin
. Carbohydrates include traces of starch
, cellulose
, β-Glucans, and arabinoxylan
s. Spent grain is considered to be a good source of un-degradable protein and water-soluble vitamins in animal feed. It is quite palatable and is readily consumed by animals. Spent grains can also be used as fertilizer
, whole grains in bread, as well as in the production of biogas
. Spent grain is also an ideal medium for growing mushrooms
, such as shiitake
, and already some breweries are either growing their own mushrooms or supplying spent grain to mushroom farms.. This, in turn, makes the grain more digestible by livestock.
Beer
Beer is the world's most widely consumed andprobably oldest alcoholic beverage; it is the third most popular drink overall, after water and tea. It is produced by the brewing and fermentation of sugars, mainly derived from malted cereal grains, most commonly malted barley and malted wheat...
brewing
Brewing
Brewing is the production of beer through steeping a starch source in water and then fermenting with yeast. Brewing has taken place since around the 6th millennium BCE, and archeological evidence suggests that this technique was used in ancient Egypt...
consisting of the residue of malt
Malt
Malt is germinated cereal grains that have been dried in a process known as "malting". The grains are made to germinate by soaking in water, and are then halted from germinating further by drying with hot air...
and grain which remains in the mash-kettle after the mashing
Mashing
In brewing and distilling, mashing is the process of combining a mix of milled grain , known as the "grain bill", and water, known as "liquor", and heating this mixture...
and lautering
Lautering
Lautering is a process in brewing beer in which the mash is separated into the clear liquid wort and the residual grain. Lautering usually consists of 3 steps: mashout, recirculation, and sparging.-Mashout:...
process. It consists primarily of grain husks, pericarp, and fragments of endosperm
Endosperm
Endosperm is the tissue produced inside the seeds of most flowering plants around the time of fertilization. It surrounds the embryo and provides nutrition in the form of starch, though it can also contain oils and protein. This makes endosperm an important source of nutrition in human diet...
. By mass, spent grains consist of about half carbohydrate
Carbohydrate
A carbohydrate is an organic compound with the empirical formula ; that is, consists only of carbon, hydrogen, and oxygen, with a hydrogen:oxygen atom ratio of 2:1 . However, there are exceptions to this. One common example would be deoxyribose, a component of DNA, which has the empirical...
s, and the rest being mostly protein
Protein
Proteins are biochemical compounds consisting of one or more polypeptides typically folded into a globular or fibrous form, facilitating a biological function. A polypeptide is a single linear polymer chain of amino acids bonded together by peptide bonds between the carboxyl and amino groups of...
s and lignin
Lignin
Lignin or lignen is a complex chemical compound most commonly derived from wood, and an integral part of the secondary cell walls of plants and some algae. The term was introduced in 1819 by de Candolle and is derived from the Latin word lignum, meaning wood...
. Carbohydrates include traces of starch
Starch
Starch or amylum is a carbohydrate consisting of a large number of glucose units joined together by glycosidic bonds. This polysaccharide is produced by all green plants as an energy store...
, cellulose
Cellulose
Cellulose is an organic compound with the formula , a polysaccharide consisting of a linear chain of several hundred to over ten thousand β linked D-glucose units....
, β-Glucans, and arabinoxylan
Arabinoxylan
Arabinoxylan is a hemicellulose found in both the primary and secondary cell walls of plants, including woods and cereal grains, consisting of copolymers of two pentose sugars – arabinose and xylose.-Structure:...
s. Spent grain is considered to be a good source of un-degradable protein and water-soluble vitamins in animal feed. It is quite palatable and is readily consumed by animals. Spent grains can also be used as fertilizer
Fertilizer
Fertilizer is any organic or inorganic material of natural or synthetic origin that is added to a soil to supply one or more plant nutrients essential to the growth of plants. A recent assessment found that about 40 to 60% of crop yields are attributable to commercial fertilizer use...
, whole grains in bread, as well as in the production of biogas
Biogas
Biogas typically refers to a gas produced by the biological breakdown of organic matter in the absence of oxygen. Organic waste such as dead plant and animal material, animal dung, and kitchen waste can be converted into a gaseous fuel called biogas...
. Spent grain is also an ideal medium for growing mushrooms
Edible mushroom
Edible mushrooms are the fleshy and edible fruiting bodies of several species of fungi. Mushrooms belong to the macrofungi, because their fruiting structures are large enough to be seen with the naked eye. They can appear either below ground or above ground where they may be picked by hand...
, such as shiitake
Shiitake
The Shiitake is an edible mushroom native to East Asia, which is cultivated and consumed in many Asian countries, as well as being dried and exported to many countries around the world. It is a feature of many Asian cuisines including Vietnamese, Chinese, Japanese, Korean and Thai...
