They were served tacos, their first time eating this food, and having experience in the food service business, they thought that the taco was food everyone would love. Jim soon after started experimenting with the taco. In 1954, Jim was ready to market the taco, and turned a trailer into a mobile taco stand in King's Beach, Lake Tahoe

By 1955, Jim and Margaret had a new, larger trailer in South Lake Tahoe. In a few years, they had enough business to open a stand in Sacramento. At this time, they started licensing franchises in limited numbers. The first Jimboy's Taco shop opened in Sacramento in 1959.
