It used to be popular in times of widespread poverty, mostly before the 1950's, but is now a common everyday meal. It is often mistaken with projara, a somewhat fancier variant of proja.

General Recipe for Proja

  • 8 cups corn flour
  • 2 cups oil
  • 1 baking powder
  • 1 glass mineral water
  • Salt

General Recipe for Projara

  • 5 cups corn flour
  • 3 cups flour
  • 3 eggs
  • 3 cups oil
  • 1 baking powder
  • 1 cup yogurt
  • 1 glass mineral water
  • Salt


The ingredients should be mixed together, and baked in a greased pan (which should be 5 cm high) until golden. Best served with Sauerkraut
